Brew Day… with a twist

Or maybe two twists. This will be the first time I’ve done a partial mash since about six months after I started brewing. I’m making my first and only named beer for a friend’s daughter’s wedding: a wee heavy. About 28 pounds (about 13 kg) of grain in a nine gallon batch. Due to losses, the calculator calls for 52 quarts, or 13 out of the 15 gallons I have available in my pot. So I am dialing back my mash to 10 gallons, and I’ll add more water once the grain bag is pulled (since it’ll be cold water). pH shouldn’t be a concern, though I will be measuring it, as I am not using much dark grains.
