I’ve noticed that on some of my mashes color took some time to develop, and conversion took longer than expected. The next few days I’ll be putting some data together that shows my conversion time for different grists. If anyone (is reading this) has any insight to how conversion works in their mashes, I’m curious to hear other’s impressions.
